Crazy for Casseroles

At our house, this week has been labeled "casserole week". Sunday night, after Jeff's fancy-schmancy dinner of italian veal shanks - Oso Bucco (sp?) - Alec kindly asked me, "Mom, why don't you make casseroles anymore?" And that was the birth of "casserole week". It could have been the fatty-veal shanks he had to knaw on that inspired the comment, but I'm banking on the fact that he misses Mom's good old home cookin' and some comfort food in his belly.

As requested by Alec, I've been whippin' out the casseroles every night this week. Monday was Chicken "Pop" Pie (as Hannah says it) casserole, Tuesday was Macaroni & Cheese, and tonight we had Pork Chop & Stuffing casserole. Tomorrow...baked spaghetti. It must be the fall weather, because it has all just been tasty.

Chicken and Broc-Broc, as introduced by you is always a favorite. Tuna Noodle is a good one too. Sounds yummy!!

Made Mildred Moser's Chicken/Rice casserole the other night, and Dad said : "Good to be reminded how much I like this dish !" and he then went on to leave no prisoners !

Me ? Homemade roast beef hash ... does that count ? It is really a side dish, but I love those nubbins ! (Thanks, JN, for the word of the day ... Linda Day, that is !)

Nope, no casseroles going on here. Picky people. Heaven forbid we mix food. Chicken - okay, rice - okay, but don't you dare put them together. Mike and Mitch will eat lasagne (but it takes so long to make).

I added the Roast Beef Hash to the Family Cookbook. Mildred's already in there. (No idea who Mildred is ! )

Yummy. You're all making me so hungry. I love a good casserole. All of the above are sooo good. If it involves chicken and some kind of noodle, I'm all over it!! I also have the best Taco casserole- it uses shredded hashbrowns in it- unique and yummy.
