We took our first trip to Erwin's Apple Orchard on Fridayand came home with a 1/2 bushel of golden crisps.
That's 11 pounds to be exact.
The bag of apples always looks smaller while you're picking
then when you get home and set it on your counter!
The kids were begging me all weekend to make something with the apples,
and I finally had the energy to do it on Sunday afternoon.
We rifled through the cookbooks and settled on applesauce
and Marianne's Fresh Apple Cake.
(everyone has to have equal turns with the apple machine -
they count how many apples each have done!)

This cake was soooooo yummy that I had to have 2 pieces.
And it was our dinner, too.
Jeff thought it tasted like a cinnamon roll.
With a side of warm applesauce, it doesn't get much better.
Our house smelled like fall. And, speaking of fall, we have one more week of summer
until school starts. We leave Wednesday for Muskegon and get back on Monday, just in time
for school to start on Tuesday.
Here's Marianne's recipe so your house can smell like fall, too!
FRESH APPLE CAKE
4 C fresh diced apples
2 C sugar
1/2 C oil
2 beaten eggs
2 tsp vanilla
2 tsp baking soda
2 tsp cinnamon
2 C whole wheat or white flour
1 C nuts (optional)
Mix apples and sugar; add oil, nuts, eggs, and vanilla. Mix dry ingredients and add to mixture. Bake in 9x13 pan at 350 deg. Cake is done in about 45 minutes or when it shrinks away from edge of pan.
Frosting:
2 C powdered sugar
1/2 C butter
4 oz cream cheese
1 tsp vanilla
Combine and whip until light and fluffy.

When should we be over ?
There is nothing like Fall in MI and I am sad we won't be there for it! Please do more apple picking, donut eating, cute sweater and jacket wearing for me! I love apple cake and will try this recipe! Looks delish!
